Congratulations to Dr. Siriwan Panprivech for her recent publication.

Congratulations to Dr. Siriwan and her team for the publication of their paper (Online First) by the Applied Science and Engineering Progress. This paper is a collaboration with Asst. Prof. Dr. Kamolnate Kitsawad and Dr. Viyada Kunathigan, faculty members of Biotechnology, Assumption University. It is entitled “Impact of Fermentation Conditions on the Extraction of Phenolics and Sensory Characteristics of Mangosteen Wine”. The authors show that fermentation conditions (yeast strains and pericarp content) affected some chemical properties and sensory characteristics of mangosteen wine. As we knew wines can be produced from a wide range of tropical fruit although modifications to the winemaking process may be required. This paper can help and guide for making wine from mangosteen or other tropical fruits to enhance their economic value.
